Neroperso is a tribute to the century old method of the "appassimento" - drying of the grapes: a wine that speaks of people, legends and cultures lost over time. Neroperso pays homage to a century old winemaking method that was widely practiced in Veneto little has changed since ancient times. After harvest, the best grapes undergo a drying process for 60 days (a process called "appassimento") until each grape is dried out concentrating its taste and aromas of ripe fruit.

The Assemblage is Pikes Northern Rhone inspired blend. Grenache brings the aromatic bright fruits and palate structure, Shiraz provides plush mid palate and blue fruits, and Mourvedre provides dark fruits and spice. A complex, juicy-yet-savoury red that pairs beautifully with slow cooked Asian style beef short ribs. Drinking superbly upon release and will reward cellaring for 5 years.

When she was cast out of the Garden, she was made into a demon, and Adam was given a second wife, Eve, who was fashioned from his rib to ensure her obedience to her man. Where Adam was created from dust, Lilith was created from filth and sediment. Primitivo refuses to be submissive to the oenology that it is the same grape as its close relative Zinfandel. Many subscribe to this idea, though they are both mutations of Crljenak, a Croatian varietal. Primitivo always brings plenty of flesh and ripeness to the table with a solid spine of certainty and structure.
