Under the watchful eye of Dalmore's Master Distiller, the liquid is initially matured in American white oak ex-bourbon casks. This gives its first base of soft vanilla and honey notes. The whisky is then transferred to Gonzalez Byass casks which have held 30YO Matusalem oloroso sherry. This additional enhancement period allows true flavour enrichment as the liquid changes profile in the cask and really allows the potential to shine through. A multifaceted whisky with a higher strength at 43.8% exposes real rarities in flavour. This is a true coming of age whisky. Aroma Seville oranges, bitter chocolate, Colombian coffee and vanilla. Palate Sweet liquorice stick, Black Forest fruits, roasted walnuts and thick marzipan. Finish Peaches, ginseng, pear tarte tatin and Sanguinello blood oranges.
