Clean, bright, cherry red colour developing to maroon. Pleasant on the nose, ripe red fruits touch. Balanced, elegant, fresh and fruity. Medium finish. Match with any kind of meat. Perfect with grilled or fried potatoes, mushrooms or ham. Some oily fish such as tuna or cod. Goes well with a medium-aged cheese and berry dessert.

Deep garnet red with a ruby rim. On the nose, notes of very ripe fruit - plum, figs and fruit compote - stand out. All enveloped in notes of vanilla, caramel, black pepper and smoke. A well-structured wine, with ripe, sweet tannins on the palate.

The grapes are picked at their peak ripeness and followed by cold maceration and temperature-controlled fermentation in French and American oak, and aged in the cask for 9 months. This wine is deep violet in colour and requires being aerated, so decanting is always recommended. As the wine begins to breathe, it releases notes of minerals, ripe black fruit and white pepper, which combines with soft, pleasant tannins.

Barrel aged in American Oak for 12 months, notes of raspberries, peppercorns, juniper and dried herbs with a touch of vanilla.

Dolcetto is an Italian grape variety that is little known or planted in Australia. The variety hails from the mountainous Piedmont region of north-west Italy. Translated literally, 'Dolcetto' means 'little sweet one'. This wine has fresh, lifted aromas of red jubes, blackberries, red currants, hints of spice and liquorice. The palate has flavours of ripe summer berries and a natural grape sweetness that is balanced by the frizzante mouth-feel providing a refreshing, lively finish.

Cable Bay Vineyards is dedicated to producing handcrafted wines known for their elegance and depth. Taking an Old World approach and combining it with New World techniques, Cable Bay's vibrant wines are beautifully expressive of the sites upon which they were grown. Blackberry, medjool date and doris plum aromatics bounce from the glass of Five Hills. The palate has solid tannin structure and beautiful shape, which will integrate and soften with time ageing in bottle. There are blackcurrant, chocolate and smoky flavours on the palate, with a mineral texture that is reminiscent of clay pots hot from the kiln, and volcanic rock.
